Layers of goodness….

Tip- you can start making the flour papdi a day ahead.

Papdi-

1.5 cup white flour

1 teaspoon salt

3 tablespoon oil

warm water to bind

Oil in a wok to fry the papdi

Make a soft dough with the above ingredients, keep aside for about half hour then on a floured surface roll the dough into a log.

Cut it into two pieces, make a dough ball of each.

Roll out the dough ball on a floured surface to  a 1/4 inch thick chapati, cut it into small diamond shapes.

In the meantime heat the oil on medium heat, once it is hot enough, add the cut papdi into it and fry till golden. Stirring frequently so that it is evenly fried. Remove and drain the excess oil. Keep the papdi aside.

Meat curry

3 pounds boneless beef , cut into small cubes 

1 teaspoon salt

1/2 teaspoon chili powder

1/2 teaspoon turmeric powder

 1teaspoon garam masala

1 medium onion finely chopped

2 tomatoes, ground

1 tablespoon tomato paste

1.5 teaspoon ginger paste

1.5 teaspoon garlic paste

 1 lemon juice 

 2 tablespoon chopped coriander leaves

1/2 cup water

3 tablespoon oil

Heat the oil in a pot and put all the above ingredients in it, stir ,cover and cook on low heat (setting at 2) for about half hour or till the meat is tender. Keep checking at intervals to avoid it from sticking to the pot.

Soupy Spaghetti

1 packet of spaghetti, boiled according to the instructions on the packet

1.5  teaspoon salt

3 cups coconut milk (light)

1/2 teaspoon turmeric powder

Put the coconut milk in a pot, add salt and turmeric to it . 

Heat well then add the boiled spaghetti, bring it to boil. (If the liquid is less then add 1/2 cup to 1 cup of coconut milk.) 

Serve if everything else is ready and if not then keep aside (make sure not to cook well ahead of time because the spaghetti will absorb the liquid).

Kachumber

1 medium onion , chopped

2 large tomatoes, chopped

1 cucumber, chopped

1/2 cup coriander leaves , chopped

1 teaspoon salt

2 lemon juice 

In a bowl mix all the above and keep aside.

Garnishes-

Golden fried onion

chopped green chilies

Way to serve

This meal is served separately and each person assembles in his/her plate.

First put about a handful of papdi.

Next put some soupy coconut spaghetti.

Third put about a serving of meat curry.

On top will go the kachumber followed by  fried onions and green chillies.

Go ahead and put it in your mouth for bursting flavor.
