Frosting (Icing) & Fillings

Extra Special Butter cream icing

Ideal for frosting and borders
1 cup butter
2 cups icing sugar
1tsp vanilla essence


Cream butter until fluffy and you hear a slapping sound (please don’t slap anyone ?). Add sugar and vanilla essence & continue creaming until well blended.  Beat at high speed until icing is fluffy. 
Tip* When using for a cake the maximum time I mix the icing is 5-7 minutes.
         When using the icing for cupcakes I make sure the icing has enough air and is lighter, I beat it for 10-15 minutes.
