Sweet potato with coconut

3 sweet potatoes (white flesh) cut into 3 inch slices

1 cup light coconut milk

1 teaspoon cardamom powder

1/2 cup sugar

Put the above in a pot and bring to boil on medium heat, cover slightly. Cook till the sweet potato is soft. At this point the coconut milk will have reduces, add sugar and let it melt.

In another pot take 1 cup thick coconut milk and add 1 teaspoon cornstarch and cook on medium heat till it becomes thick.

Turn the cooked sweet potato in a serving dish and add the thick coconut milk to the sweet potato and serve. Enjoy! 🙂
