Shortbread Cookies aka Eat sum more

Ingredients-

250 grams soft butter

1 cup fine sugar

1/4 cup oil

3 tablespoons cornstarch

1 teaspoon vanilla essence

 3 cups cake flour/all purpose flour

Method-

Measure the butter, oil, sugar, cornstarch and vanilla essence in bowl, beat it till it is smooth and fluffy. Add in about 2 and 1/2 cups flour and mix it well. If the dough is sticky then add the rest of the flour and mix it well.

Divide the dough into two portions and make into logs. Wrap the logs in saran wrap and refrigerate for about and hour.

Preheat the oven at 350 degrees Fahrenheit.

Cut the dough into 1/4 inch thick slices and arrange on a baking tray , keeping about 1 inch between each cookie.

Bake for about 20 minutes or until the cookies are light golden.

Remove from the oven , let it cool serve or store in an airtight container.

These cookies are so versatile, you can use  sprinkles in the dough, coconut or chocolate chips or even crushed nuts!
