Phiko (Non-spicy) Saag (curry)

 Ingredients:

  • 1 kg meat cut in 2 inch pieces
  • 2 medium onions-chopped
  • 1 tbsp fenugreek leaves fresh
  • 2 green chillies chopped
  • Salt
  • 2 tomatoes (cubed)
  • 2 medium potatoes cut into 4 pieces
  • Dhania (cilantro)- chopped
  • Ginger-garlic paste- 11/2 teaspoon
  • Turmeric pd 1/2 teaspoon
  • 4-5 tablespoon oil

Method:

In a pressure cooker heat oil and fry onions, fenugreek leaves, and green chillies until light brown then add the meat, salt, cilantro and tomatoes, sauté and bring the heat to medium. When the meat is brown and liquid is released , add 1 cup water and close the lid of the pressure cooker and cook with 6-7 whistles.
Switch off the stove and let it cool. Once it is cool open the lid and switch on the stove to medium heat and add 1 cup water and the potatoes. Check salt, bring to boil till the potatoes are cooked. Serve on a bed of plain rice on individual plates. This is a very comfort food on cold days or after a long journey.

My mother came to me, hoping (for my favor) during the lifetime of the Prophet. I asked the Prophet, “May I treat her kindly?” He replied, “Yes.” Ibn ‘Uyaina said, “Then Allah revealed: ‘Allah forbids you not with regards to those who fought not against you because of religion, and drove you not out from your homes, that you should show them kindness and deal justly with them.’…….(60.8)
