Narrated Ibn `Umar:
Allah’s Messenger (ﷺ) said, “Amongst the trees, there is a tree, the leaves of which do not fall and is like a Muslim. Tell me the name of that tree.” Everybody started thinking about the trees of the desert areas. And I thought of the date-palm tree but felt shy to answer the others then asked, “What is that tree, O Allah’s Messenger (ﷺ) ?” He replied, “It is the date-palm tree.” Sahih Al-Bukhari 61
Ingredients-
200 grams butter
175 grams sugar
4 eggs
½ cup sour cream
1 teaspoon vanilla essence
200 grams all purpose flour
25 grams corn flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
2 apples peeled and cut into small pieces
1 tablespoon brown sugar
For the coffee crumb
½ cup soft butter
½ cup brown sugar
¾ cup all purpose flour
1 teaspoon good instant coffee
Coffee Glaze
1 teaspoon good instant coffee
¾ cup whipping cream
¼ cup icing sugar
Mix together till smooth.
Method-
Grease a 9-inch Bundt cake pan with butter.
Measure all the ingredients out – sift flour, corn flour, baking powder and baking soda in a bowl. Crack the eggs in a separate bowl.
Pre-heat oven at 350 degrees Fahrenheit.
Combine all the ingredients for the coffee crumb in a bowl, keep aside.
Beat sugar and butter well till it is light and smooth. Add eggs one at a time, continue beating till well incorporated. Add the sour cream and give a good mix.
Fold in the flour mixture in two batches with a spatula till well incorporated.
Pour half the batter into the prepared pan.
Add the brown sugar to the apples and give a good mix.
Layer the apple & brown sugar mixture on the cake batter then pour rest of the cake batter on it.
Bake in the preheated oven for about 35-40 minutes or till it springs up when patted lightly.
Remove from oven and keep aside for about 5 minutes before turning it on to the cooling rack.
When completely cool, add coffee glaze .
