Zaa’tar Chicken

And with Him are the keys of the unseen; none knows them except Him. And He knows what is on the land and in the sea. Not a leaf falls but that He knows it. And no grain is there within the darknesses of the earth and no moist or dry [thing] but that it is [written] in a clear record.

Ingredients

6 chicken legs, cut into two pieces, skin off

11/2 teaspoon salt

1/2 teaspoon black pepper powder

Juice from 1 lemon

Rind of 1 lemon

4-5 teaspoons zaa’tar (Middle Eastern spice blend of herbs)

4-5 tablespoon olive oil

1 teaspoon crushed garlic

1 teaspoon red chili flakes

Method

Clean the chicken pieces and cut into two pieces, make slits into the chicken flesh.

Rub the salt well on the pieces.

In a bowl add the lemon rind, lemon juice, black pepper powder, zaa’tar, garlic, red chili flakes and olive oil, mix well and rub well onto the chicken. Keep the marinade overnight or 6-8 hours in the fridge.

When ready to cook, preheat the oven at 400 degrees Fahrenheit ,arrange the chicken pieces in an ovenproof dish, drizzle some olive oil and bake in medium heat oven for about an hour, check for doneness, you can continue cooking for 15 minutes if you feel it is not ready.

Serve hot.
