Tuna Sub

With schools closed ( phew!) and kids home, kitchen gets busy and so do the mums! I do my best to give ideas to my kids to at least prepare their and my lunch  ?or I’ll hook up a simple lunch as the Tuna sandwich for everyone.

3 Sub loaves
1 can flaked tuna in water, drained
1 teaspoon Tikka masala
1/2 teaspoon salt
1 Tablespoon Ranch salad dressing/any bbq sauce/sub sauce
Lettuce leaves, washed and individually separated and halved
Tomato slices
If you have some avocado, slice it up or make a nice guacamole.

Put the drained Tuna in a bowl, add the tikka masala powder, salt, the ranch salad dressing. Mix it together till it is stiff creamy. Warm the sub loaves, arrange the lettuce leaves ( two or three), spread the Tuna mixture, put two to three slices of tomatoes and lastly spoon the guacamole. Cover with the other half of the loaf and serve with ketchup or if you prefer it fiery like my eldest son, chilli sauce?.

 Guacamole
2 avocados, peeled and seeded
1/2 teaspoon salt
1/2 jalapeno finely chopped
1 lemon juice
1/4 onion, finely chopped

Mash the avocado with the back of the spoon and add all the ingredients to it. Mix well with a spoon and use as a dip, sandwich spread or for your favorite Mexican food.

Another twist to Tuna sub-
1 can tuna, drained
1/2 teaspoon garlic paste
1 Tablespoon Tandoori masala powder
2-3 stalks of kale, finely chopped
2 Tablespoons Olive oil ( extra virgin)
Onion, few slices

Combine all together and and fill it in the sub. Quick lunch ?
