Spinach Bread/Pie

This recipe was on air on Dinner Tonight by late Sara Riaz on Zauq Tv, just thought my family and friends could benefit since the old recipes don’t come on air quite often. Recently I put feta cheese instead of paneer and GUESS WHAT?! It tasted sooo good! IT gave the Middle Eastern taste-tangy and spinachy!

4 cups flour
1 cup milk ( warm)
1 Tblsp yeast
1 Tblsp sugar
1 tsp baking pd
2 tsp salt
1 egg
2 Tblsp oil
1 cup warm water

Proof the yeast by adding 1/2 cup warm milk to the yeast in a small bowl. In the meantime put all the ingredients in a bowl and when the yeast is fluffy add to the flour mixture. Knead the flour by adding water till the dough comes all together like for bread dough. Keep it aside for 2 hours well covered to let the dough rise.

Filling

200 grams  Feta cheese, crumbled
pinch of salt
1/4 tsp black pepper pd
2 Tbsp bread crumbs
400gms spinach- blanched and pureed

1-2 green chillies finely chopped (optional)

In a bowl put all above the ingredients and mix it well with a spoon.

Method

Take the bread dough, on a floured board knead it and divide into two. Roll out both pieces of the dough like pizza and keep one aside. On a round pizza plate put one rolled dough (the chapati) and put the filling around and some in the center. Take the other piece and cover the filling. In the center put a bowl over to mold it while also securing the edge. Stick the edge by moistening and sealing. With a sharp knife make slits on the edge of the pie and carefully twist the piece. After slitting and twisting all around, remove the bowl, brush the pie with beaten egg and sprinkle the center with sesame seeds. Bake at 400F till pie is golden .
