Pav Bhaji
¼ Kg green peas
¼ Kg carrot cubed
¼ kg cauliflower cubed
1 brinjal cubed
15 cloves garlic paste
2 tsp pav bhaji masala ( you can get a good quality one -Shan at any South Asian grocery store)
8 green chillies this makes it very spicy, you can reduce to your preference
1 tsp whole cumin seeds
½ kg tomatoes chopped
¼ kg onion chopped

½ cup coriander leaves chopped
Pinch of asafoetida
Salt
1 cup oil
Steam the vegetables. Heat the oil, add cumin seeds, asafoetida and fry onions till pinkish. Add garlic and continue cooking. Add tomatoes and with it add salt, chillies, sugar, coriander leaves, chilli pd and pav bhaji masala. Cook till oil floats. Add the steamed vegetables. Add 1 lemon juice. On a hot pan melt butter and crackle few cumin seeds, toast the halved buns on it. Serve hot.
You can do a good twist by making yogurt chutney with- 1 cup yogurt, salt to taste and few sprigs coriander leaves (chopped). Sprinkle it on top of the pav bhaji on bread, sprinkle tamarind and gram flour vermicelli.
