This is an amazing addictive sweet diamond – don’t know to say bread or doughnut?? Great in Ramadhan and Eid!
When I was visiting a small Island in Kenya known as Lamu we had the most amazing soft Mitai. Mombasa has them too! Being born and raised in Kenya is a privilege because you get to eat foods from the mainland and the islands.

1 1/2 cup All purpose Flour
1 teaspoon instant yeast
3 tablespoon coconut powder ( In Kenya we would use thick coconut milk)
1/2 cup warm water
1 teaspoon cardamom seed powder
1 tablespoon milk powder
Combine all the ingredients in a bowl except water. Slowly add water and with your hands and knead into a soft dough. Cover and let it rise till double ( at least 2 hours).
Punch it down and divide the dough into two. Roll out on a floured board to about quarter inch thickness ( don’t worry if your dough is rolled out in an odd shape, ?) Cut into diamond shapes by cutting into verticals then across. Deep fry in fresh oil on medium low heat till golden ( originally it’s pretty dark). It’s better to put the fryed diamonds in big shallow yet wide bowl to mix the sugar syrup on. While it’s frying make the sugar syrup.
Sugar Syrup
1/4 cup water
3/4 cup sugar
Bring the above to a boil till when you pour a drop on a plate it will not spread and is sticky.
Pour the syrup on the diamonds and with a wooden spoon mix gently till all are well covered. I like to flip the mitai in the bowl to get the rough look. Let it set and then gently lift and serve on a plate. Enjoy!?
