Going Mangoes!

I love summer with all the fresh varieties of berries, cherries and mangoes available in the local grocery stores. The best and refreshing way to serve the amazing flavorful mangoes are as Mango Lassi ( mango smoothie) and Mango Salad.

Mango Lassi

2 cups mango pieces ( peel the mangoes and slice the flesh in a bowl, discard the seed)
2 Tablespoon sugar you can use honey to balance the sweetness.
Pinch of saffron strands
2 cups yogurt
1/2 cup water if the smoothie is thick, you can add more to lighten to your preference.
Pinch of cardamom seeds powder.
Blend all the above together and served chilled ?

Mango Salad

1 cup roughly chopped iceberg lettuce ( or any of your choice, you can use the green mix too)
1 mango chopped
1/2 cucumber thickly sliced
Few almonds sliced
1 tsp Balsamic vinegar
In a bowl layer the lettuce or greens, spread the mangoes and cucumber. Sprinkle the almonds and Balsamic vinegar. Serve.
Options-
You can add dried cranberries, pine nut seeds, pumpkin seeds, walnuts or pecans. It’s fun to play!
