Meat Loaf

Ingredients

500 grams ground meat ( Beef or goat)
1 teaspoon salt
1 teaspoon oregano or Italian mixed herbs (dried)
1 tablespoon fresh parsley, chopped
1 teaspoon garlic paste
1 teaspoon black pepper
1 teaspoon red chilli flakes
2 tablespoons tomato ketchup
1 tablespoon Worcestershire sauce
1 tablespoon paprika
1 cup bread crumbs
2 eggs lightly beaten

Combine all the above ingredients in a bowl and mix well to form a ball. Put it on an aluminium foil on a tray and shape it to make a loaf. Preheat the oven at 350 degrees Fahrenheit and bake for 1 hour.

Apply some barbecue or steak sauce (below) on the top of the meat loaf  and continue baking for 10 more minutes. Serve the meatloaf with salad of your choice and mashed potatoes

Sauce
1 teaspoon Dijon mustard
1 Tablespoon Worcestershire sauce
1 teaspoon black pepper
1 teaspoon white or brown vinegar
1/2 cup water
1 tsp corn starch

Mix cornstarch in water and add all the other ingredients in the pot. Cook on medium heat till the sauce thickens. Serve with the meatloaf to add a little zing ?

Mashed Potatoes

10 medium sized potatoes ( I prefer Yukon) boiled and mashed
1 tsp garlic, crushed
1 teaspoon salt
2 Tablespoons butter
1 Tablespoon parsley, chopped

½ cup milk

Preheat the oven at 400 degrees Fahrenheit.
Mix all the above ingredients together and bake for 30 minutes.

Kale Salad

½ bunch Kale, remove the stems and chop.
 ½ onion, sliced
1 tomato, thinly sliced.
½ cup Feta cheese, crumbled
1 Tablespoon lemon juice
½ teaspoon salt.
 

Mix the chopped Kale, onion and tomato. Sprinkle the crumbled Feta cheese and add the salt and lemon juice. Mix well and serve immediately.
