This is one very soft and scrumptious Red Velvet cake, my friends, family and neighbors just love it! At least it’s a repeat order!!
1 1/2 cups cake flour
1 tsp baking soda
1 tbsp cocoa powder
1/4 cup butter
3/4 cup sugar
1/2 cup oil
2 large eggs
1 tsp vanilla extract
1 tbsp vinegar
1/2 cup buttermilk
1 tsp food colour gel or powder
Sift flour, cocoa and baking soda in a bowl. Preheat the oven at 370 F. Grease the cake pan.
Beat the sugar, oil and butter until light and fluffy. Add eggs one at a time, when well mixed add buttermilk. Mix well and add the flour mixture in 2 batches. Pour the batter into the prepared pan and bake for 30-35 inured. For cupcakes it takes 13-15 minutes to bake. Will make one 8 inch cake or 15 cupcakes.
1 package ( 250 grams) cream cheese
2 cups whipping cream (liquid)
1 cup icing sugar
1 tsp vanilla extract
Beat the cream cheese till it’s soft and creamy. Add in the whipping cream, icing sugar and vanilla extract. Mix well.
Cream Cheese Frosting 2
250 grams butter, soft
250 grams cream cheese, soft
1 tsp vanilla extract
1 cup icing sugar
Beat butter and cream cheese till well incorporated. Add the vanilla and icing sugar and continue mixing till it is smooth and creamy.
