Pecan Brownie
1/2 cup butter, soft
3/4 cup sugar
1 tsp vanilla extract
2 eggs
1/2 cup good quality cocoa
1/4 tsp baking pd
1/4 tsp salt
1/2 cup coarsely chopped pecans,
Heat oven to 350 F. Lightly grease 8 or 9 inch square baking pan.
Beat butter, sugar and vanilla.Add eggs one at a time, beat well. Stir together flour,cocoa, baking pd and salt. Gradually add to the butter mixture, beating well until well blended. Stir in chopped walnuts. Spread in well prepared an.
Bake 20-25 mins or until brownies begin to pull away from sides. Cool and cut into square pieces.
Best served with vanilla ice cream and chocolate syrup or you can frost with the recipe below.
Chocolate Pecan Frosting
1 1/2 cup icing sugar
2 Tblsp cocoa
3 Tblsp butter
2 Tblsp milk
1/4 tsp vanilla extract
1/4 cup chopped pecans
Stir together icing sugar and cocoa.
Heat butter and milk in a small saucepan over low heat until butter has melted. Gradually beat into cocoa mixture,beating until smooth. Stir in vanilla and pecans. Frost the top of the brownies and garnish with half pecans.
