Chocolate Ganache

Chocolate Ganache
3 cups Dark chocolate merkens or chocolate block ( I like to use Belgian chocolate wafers)
1 cup Belgian milk chocolate wafers or merkens
2 cups heavy whipping cream, the liquid one in the carton
Heat the cream till starts to bubble. Pour over the chocolate, keep aside for 2 minutes then very gently mix with a wooden spoon or spatula. Mix till all chocolate is incorporated with the cream. Cover the bowl with cling wrap and keep overnight. Next day, when ready to use, whip and frost the cake and decorate.
White Chocolate Ganache
4 cups white chocolate merkens (I like block white chocolate too).
2 cups heavy whipping cream

Heat the cream till starts to bubble. Pour over the chocolate, keep aside for 2 minutes then very gently mix with a wooden spoon or spatula. Mix till all chocolate is incorporated with the cream. Cover the bowl with cling wrap and keep overnight. Next day, when ready to use, whip and frost the cake and decorate.
This is white ganache, the texture is just like butter cream frosting.
