Here is an amazing cupcake recipe you all will enjoy, soft and melt in the mouth.
Use whipped ganache to decorate for extra yumminess.
Chocolate Cupcakes
200grams ( 7 oz) plain flour
2 teaspoon baking powder
4 Tablespoon cocoa
200 grams ( 7 oz) sugar
1/2 teaspoon salt
100 grams ( 3 1/2 oz) unsalted butter, soft
3 eggs
1/2 cup milk
1/2 cup warm water
1 teaspoon vanilla extract
1 Tablespoon Greek yoghurt
Preheat the oven at 180 C and prepare the cupcake pan with the cupcake cases.
Sift flour, cocoa & baking powder in a bowl. Add the sugar, salt and butter. Mix until it resembles fine breadcrumbs. In another bowl whisk the eggs, milk, vanilla extract & yoghurt together until well blended.
Slowly pour the egg mixture to combine. Gently whisk until smooth. Carefully spoon the cake mixture into the cases filling each one half full.
Bake for 20-25 mins until lightly colored and springy to the touch.
Makes about 18 medium sized cupcakes
