Cakes and Cupcakes

Rich Fruit Cake

11/8 cups cake flour  

2 teaspoon baking powder.                        

grated rind of 1 lemon

5 eggs 
  1/2 cup ground almonds
1tsp ground mixed spice     

1 cup margarine/butter (soft) 

 1 cup each of currants, raisins and sultanas (sometimes I substitute sultanas or currants with dates)
1 cup soft brown sugar.    

1/2 cup milk/instant coffee                 

1/2 cup glace cherries

Sift the flour, baking powder and spices into a large bowl.
Chop the cherries into quarters. Add all the ingredients to the flour and beat for about 4 minutes until completely mixed.
Put it into a greased and lined  9 inches round pan.
Bake in a moderate oven at 350 F till when the toothpick inserted comes out clean (45mins-60mins).
Leave in the tin for 5 minutes, then turn it out and cool on a wire rack
