1 ½ cup flour
1 ½ tsp baking pd
¾ cup butter/margarine
1 cup sugar
4 eggs
½ cup milk/warm water ( buttermilk works wonders!)
Few drops of vanilla extract
Prepare an 8”round cake pan by greasing it well with Bake Easy or Pam. Pre-heat the oven at 350 F. Sift the flour & baking pd.
Beat the butter & sugar till light & fluffy. Add in the eggs one at a time & beating it well after each addition, add in the vanilla. Mix in the flour & baking pd alternating with milk and beat well with the mixer. Pour the batter into the prepared pan till it is ¾ full. Bake in the preheated oven on the center shelf for 30-35 minutes/when lightly tapped on the center the cake springs up/when a toothpick inserted in comes out clean. Loosen the cake from the pan & remove it gently on to the cooling grid.
This cake was originally in grams but had to convert in cups for my students and friends.
Update….
Recently after really working to get my cakes moist and soft I found out buttermilk works wonders! Replace milk with buttermilk to get the results you want with your cakes.
Home-made buttermilk – 1/2 cup hot milk, add 1 tablespoon vinegar. Let it sit for 5 mins and it’s ready to use.
